An ancient culinary tradition in the heart of Chamberí.

Seper Nikbin grew up in Tehran, where the kitchen was the heart of family life. After years in Italy, Australia, and Spain, he opened Pérsico to bring Madrid a centuries-old cuisine still largely unknown in Europe. Khorasan saffron, fermented kashk, pomegranate, and Iranian fire-grilled cooking—ingredients and traditions that travel from Iran so authenticity comes through from the very first bite.
