A family kitchen from Tehran and a charcoal grill on Calle de Sandoval.
From Tehran to Chamberí
Seper Nikbin grew up in Tehran, in a family where food was at the centre of daily life. After years living in Italy, Australia and Spain, he decided to bring to Madrid a cuisine with centuries of history that is still little known in Europe.
In September 2025 he opened Pérsico at Calle de Sandoval 12, in the Chamberí neighbourhood.
Recipes learned at home
Seper learned to cook at home: his father was an excellent cook and his grandfather a well-known one. Those family recipes are the foundation of Pérsico’s menu.
The dish that best sums up that heritage is Kashk-e Bademjoon, our signature dish.
Our cooking
Contemporary Persian cooking: traditional Iranian recipes made with today’s techniques. Many ingredients come straight from Iran:
- Saffron from Khorasan, for the rice and the kebabs
- Kashk, the fermented goat’s yogurt sauce in our Kashk-e Bademjoon
- Pomegranate, in sauces, salads and desserts
- Iranian charcoal grill, for the Vaziri, the kebabs and the octopus
Every dish on the menu is gluten-free and suitable for coeliacs, with gluten-free bread (more for coeliacs), and there are vegetarian options. Persian food is not spicy: spices are used with balance.
Where we are
Calle de Sandoval 12, 28010 Madrid (Chamberí), a few minutes from San Bernardo (L2, L4), Bilbao (L1, L4) and Quevedo (L2) metro stations. Open Wednesday to Sunday.
